Summary of Position
The successful sous chef will employ their culinary and managerial skills in order to play a critical role in maintaining and enhancing our guest’s satisfaction.
Job Qualifications
- Directly supervises kitchen staff responsible for the daily preparation of all menu items to ensure that methods of cooking, garnishing and portion-sizing are as prescribed by Executive Chef’s recipes.
- Assumes complete charge of the kitchen in the absence of the Executive Chef.
- Assists Executive Chef with supervision and training of employees, sanitation and safety, menu planning and related production activities.
- Makes recommendations for maintenance, repair and upkeep of the kitchen and its equipment.
- Personally works in any station as assigned by the Executive Chef.
- Consults with front-of-house personnel throughout a shift.
- Assists in food procurement, delivery, storage and issuing of food items.
- Expedites food orders during peak service hours
- Inspects presentation of food items to ensure that quality standards are met.
- Helps in the preparation and design of all food and drinks menus
- Produces high quality plates both design and taste-wise
- Performs special projects delegated by management.
- Understands and consistently follows proper sanitation practices including those for personal hygiene.
- Has excellent communication skills with a “Do Whatever it Takes” attitude.
- Has a true passion for food and hospitality
Requirements
- Education: Culinary degree preferred. Certification from American Culinary Federation or other hospitality association a plus.
- Experience: 4 or more years as a Sous Chef, running a large, profitable restaurant operation, one that generates a good percentage of revenue from private events including weddings. Stable and progressive work history; Strong work ethic.
- License and Insurance: Must have a reliable vehicle, a valid driver’s license, and proof of insurance.
- Accessibility: Must have a cell phone and be accessible/responsive 24 hours a day, 7 days a week. Maintain an open-door policy via phone, text, and email.
- Hours/Physical: Able to work a minimum of 50 hours per week, more when necessary. Able to work flexible hours necessary to manage the operation effectively. Physical requirements include ability to stand for long periods and walk, climb stairs, balance, stoop, kneel, crouch, bend, stretch and twist or reach. Push, pull or lift up to 50 pounds. Continuous repetitive motions. Work in hot, humid and noisy environment.
